Sunday Morning Blueberry Coffee Cake

Coffee cake is great for brunch, gathering with friends or just devouring by yourself! 
I made this cake this morning and it was quite tasty.
Ingredients:
1/2 cup butter (or margarine)
1 cup sugar
2 eggs
2 cups flour
1 teaspoon baking powder
1 8 oz container sour cream
1 teaspoon vanilla
1 cup fresh or frozen blueberries
1 tablespoon sugar
1 teaspoon cinnamon
sprinkle of powdered sugar

Cream butter; gradually add 1 cup sugar, beating well at medium speed of an electric mixer.  Add eggs, one at a time, beating after each addition.  Combine flour, baking powder and soda in another bowl.  Gradually add to creamed mixture, mixing until blended.  Stir in sour cream and vanilla.  Spoon 1/2 of batter into a greased and floured 10 inch bundt pan; sprinkle with blueberries, 1 tablespoon sugar and cinnamon.  top with remaining batter.  Bake at 350 degrees for 45-50 minutes.  Cool in a pan 10 minutes; remove from pan and let cool completely on a wire rack.  Sprinkle with powdered sugar, if desired.

Sweet Amish White Bread - Easy and Delicious

This recipe is one of my favorite homemade bread recipes.  The only step I do differently is in the proofing of the yeast.  I use 110 degree water and only 1/2 cup of water and a half teaspoon of sugar to make sure the yeast is alive.  Once the yeast bubbles and I know it is active, then I add the rest of the water and sugar.  I've tried it the way the video describes and it doesn't work for me.  I've typed the recipe for you below the video.



Sweet Amish White Bread

Makes 2 large loaves

2  C Water 110 degrees F

2/3 C  Sugar

1 1/2 Tablespoon Yeast

1 1/2 teaspoon Salt

1/4 C oil

5-8 C. King Arthur Bread Flour (the best flour!) - depending on humidity

Dissolve 1 /2 teaspoon of the sugar and 1/2 cup of the water.  Lightly sprinkle in the yeast.  Stir to proof the yeast.  It should get foamy.  Once foamy, add the remaining sugar and water.  Be careful not to over stir.

Add oil and lightly stir.  Add 1/2 the flour.  Add salt.  Start mixing.  The mixture should be "soupy".  Add, stir, add, stir.  Keep adding flour until you have the right dough consistency and it is not too tacky.  Place the dough on a floured surface and knead for 5-6 minutes.  The dough should be spongy or "push back" when poked.  Put in a large bowl and cover with a warm, wet cloth to rise for 1 hour.

Flour a surface and divide dough into two sections.  With a rolling pin, roll out each dough section into a rectangle and then roll it up.  Place in a greased loaf pan, cover with a warm, wet cloth again to rise for 45 minutes or longer.  Set oven for 350 for 30 minutes to bake.  Take the bread out of the pans while still hot and place on a wire rack to cool.

Deviled Eggs!


Deviled Eggs Recipe

Many of my friends have asked me how I make my deviled eggs.  I have never measured the ingredients so I was never able to tell someone precisely how I do it. Today I took the time to measure out the actual recipe.  So here goes!

12 eggs hard boiled, peeled and then cut in half lengthwise
1 teaspoon of apple cider vinegar
1/2 cup plus 1 Tablespoon of Mayonaisse
1 teaspoon yellow mustard

Crush the egg yolks in a medium mixing bowl.  Add cider vinegar, Mayonaisse, mustard and sprinkle with salt and pepper.  If your mixture looks too dry, add just a little more mayo but not too much. Stuff each egg half until the filling is gone. If you run out of filling, take some from one or two that you put too much on.  Put on a platter or in a carry and go.

Grilled Poblano Pepper Stuffed with Cream Cheese

Grilled Poblano Peppers Stuffed with Cream Cheese
This appetizer is a summertime grilling favorite at our house.

Ingredients:
6 Medium sized Poblano Peppers
1 Brick of Cream Cheese
1/s lb Bacon
Toothpicks

Directions:
Cut a half circle around the top of the pepper and then a straight line from the top to the bottom point of the pepper to remove seeds.  These peppers are more mild than jalapeno peppers but can be hot if some seeds are left in the pepper.
Stuff the pepper with cream cheese.  Not completely full but enough cream cheese to go around for all 6 peppers.
Wrap one slice of bacon around the outside of the pepper securing with toothpicks and closing the pepper at the same time.
Grill until the pepper is soft or the cream cheese melts with a little char on the bacon and serve!

Hawaiian Chicken Kabobs

Hawaiian Chicken Kabobs
This is a great summer grilling recipe!

Ingredients
1 ½ lbs bnls chicken breasts, cut into 1 inch cubes
1 (15 ¼ oz) cans unsweetened pineapple chunks
½ cup soy sauce
¼ cup vegetable oil
1 T brown sugar
1 t garlic powder
1 t dry mustard
¼ t fresh grnd pepper
1 large green pepper, 1 inch pieces
1 large onion, 1 inch pieces
12 med. Mushrooms
18 cherry tomatoes
Hot cooked rice

Directions:
Put chicken in large shallow dish
Drain pineapple, keep ½ cup juice, set pineapple aside.
Mix juice with the next 7 ingredients in a small pan.
Bring to a boil, reduce heat and simmer for 5 minutes.
Pour over chicken. Cover and chill for 1 hour.
Remove chicken from marinade.  On a skewer, alternate chicken, pineapple, green pepper, mushrooms, onion, tomatoes.  Grill kabobs over hot coals for 20 minutes or until chicken is done.
Turn and baste frequently with leftover marinade.

Serve over hot rice.

Southern Chicken Pie

This recipe has long been a favorite at our house.  One of my son's favorite casseroles while growing up.  This recipe uses bicuits on top instead of a full crust.

Southern Chicken Pie










6 med potatoes, pared & quartered
6 med carrots, pared & quartered
1 sm onion (about ¼ cup)
¼ cup of chopped green pepper (I omit)
4 Tablespoons butter or margarine
1 can cream of chicken soup
3 cups of cooked chicken or turkey
Biscuit Wedges (recipe follows)
Variations:
You can also use refrigerator biscuits instead of homemade or add other vegetables to the recipe.

1.    Cook potatoes & carrots in boiling salted water for 15 minutes or until tender; drain but save 1 ½ cups of the cooking liquid
2.    Saute the onion & green pepper in butter or margarine until soft in a medium saucepan; stir in canned chicken soup and the reserved liquid from potatoes & carrots.
3.    Spoon vegetables & chicken into a 9X13 casserole dish; pour sauce over.
4.    Bake in a hot over – 425 degrees for 15 minutes while making biscuit wedges. 
5.    Arrange biscuit wedges on top of hot mixture and bake for 15 minutes longer, or until biscuits are golden

Biscuit Wedges:  Makes 6-12 depending on how thick you roll out the dough.


Sift 1 ½ cups of all purpose flour, 2 teaspoons baking powder and 1 teaspoon salt into a med bowl.  Cut in ¼ cup (1/2 stick of butter or margarine); add ½ cup of milk all at once.  Stir just until blended.  Turn dough onto a lightly floured board: knead lightly for 1 minute.  Roll out and cut biscuits:  Brush tops lightly with milk and sprinkle with sesame seeds.
